Salt and Pepper Croutons
Looking for a great way to use leftover bread? These croutons are perfect to serve in a salad or with soup.
Serves: 4 - 6
Ingredients:
1 loaf rustic artisan bread - Italian or Sourdough
1/4 cup extra virgin olive oil
Kosher salt
Freshly ground black pepper
Directions:
These croutons are easier to make with stale bread, so try to buy the bread the day before. Cut bread into 1-inch cubes and lay on a baking tray overnight so they become stale.
Preheat the oven to 350 degrees F.
Pour olive oil onto a large baking tray. Add the bread cubes to the tray, then sprinkle with salt and pepper, gently toss. Spread out bread cubes so there is a only a single layer. Bake for around 15 minutes until golden and crunchy.
Whenever I have leftover bread I either freeze the loaf whole, or cube it and then freeze it. I then have bread for croutons or breadcrumbs all the time and there's less wastage. See our Good to know article on Leftover Bread for more ideas about using leftover bread.
Serve either warm or cooled, as an accompaniment for salads or soups.
