Orange and Arugula Salad

Serves: 4

Ingredients

For the salad:

1 packet arugula

3 large oranges

For the dressing:

2 tablespoons rice wine vinegar

2 teaspoons marmalade

1/2 teaspoon kosher or sea salt

1/4 teaspoon freshly ground black pepper

3 tablespoons extra virgin olive oil

Instructions:

For the salad:

Add washed and dried arugula to a large mixing bowl. Cover with plastic wrap and refrigerate.

Supreme the oranges and place the segments in a small bowl. Cover with plastic wrap and refrigerate. 

For the dressing:

Place all of the ingredients in a screw top jar, squeeze the leftover orange pulp into the jar and shake until well combined. Refrigerate until serving.

To assemble:

When ready to serve, split the arugula and orange evenly between four plates. Drizzle the dressing over the arugula and orange. Add the Parmesan Wafer to the top or side of the salad. Serve immediately.
