Easy Marinated Shrimp
This is a very easy mid-week recipe that can be cooked either on the grill or inside.
Serves: 2-4
Ingredients:
1 lb medium sized raw *deveined shrimp
1 lemon
1 clove garlic, finely chopped
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons extra virgin olive oil
*Deveined shrimp have had the black vein (the digestive tract), that runs along the back of the shrimp removed.
Instructions:
Peel the shrimp and place in a medium sized bowl. For extra time saving, buy already peeled shrimp.
Zest the lemon and then squeeze. Add the lemon zest and juice to the shrimp. Add the garlic, pepper flakes, salt, pepper and olive oil to the bowl.
Toss the shrimp in the mixture to coat. Cover with plastic wrap and refrigerate for 30 minutes.
Preheat your grill. Place the shrimp in a **nonstick grill pan and cook over a medium heat until the shrimp is just turning pink. Don’t overcook the shrimp otherwise they will have a rubbery texture.
Use a regular non-stick saute pan if you are preparing the shrimp inside.
Serve with a salad and a loaf of crusty bread.
