Recipe: Mini Meatloaves wrapped in Prosciutto

Serves 2

  • 3/4 pound lean ground beef
  • 1 small onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup fresh breadcrumbs
  • 1 egg, beaten
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon ketchup
  • 1 teaspoon sweet chili sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly grated black pepper
  • 2 slices proscuitto

Preheat oven to 375 degrees F (190 degrees C).

In a small fry pan, warm oil and add onions. Cook onions until softened, but not browned. Add garlic and breadcrumbs and cook for about 2 minutes. Allow the mixture to cool.

In a medium sized bowl, add the beef, mustard, ketchup, chili sauce and beaten egg. Then add the onion mixture, salt and pepper. Gently mix ingredients until well combined.

With damp hands, divide the mixture into two and form mixture into two meatloaves. Wrap each loaf with prosciutto and place on an oiled roasting pan.

Bake meatloaves for 30 to 35 minutes until proscuitto is crisp and meatloaves are cooked.

Prosciutto is an Italian-styled ham that is salt-cured and air-dried.


Variation:

  • Substitute prosciutto with thinly sliced bacon.
