Recipe: Pomegranate Marinade

Pomegranate Juice is tart and sweet at the same time. It's great for marinades because it tenderizes meat as well as flavoring it. This is a very quick marinade to pull together, perfect for mid-week or last minute entertaining. It's a great marinade for chicken, turkey or lamb.

  • 1 cup 100% Pomegranate Juice
  • 1/4 cup Olive Oil
  • 1/4 cup maple syrup
  • 1 clove garlic, chopped
  • 1 tablespoon fresh grated ginger
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Place all the ingredients into a large resealable bag. Slosh the ingredients around to mix well. Then add the meat to the bag, refrigerate and let marinade for at least 2 hours or overnight.

Remove the marinated meat from the refrigerator about 30 minutes before you want to start cooking it, so it will warm to room temperature and cook evenly. Grill or roast the meat as you would normally.
