Recipe: Ice Cream Sandwiches

This "some assembly required" recipe can be made to fit your mood and timeframes.

Serves 6

• One packet or batch of homemade large sized cookies
• Vanilla ice cream

Arrange cookies on a platter. Remove ice cream from the freezer at least 5 to 10 minutes before serving so that ice cream is easily scooped. Place ice cream in a ice bucket with ice in the bottom to keep it cool. Serve family style at the table so that guests can make their on "sandwiches". To assemble, use a cookie for the bottom, scoop the desired amount of ice cream as the filling then place a cookie on top.

If you are short on time, buy your favorite cookies and vanilla ice cream. If you have extra time, make a batch of your own favorite cookies.

Variations:

• Have two varieties of cookies so that guests can mix and match.
• Have bowls of chopped candy and nuts for adding to the ice cream filling before the second cookie is placed on top.
