Here's a menu that gives you the best of both worlds - big on flavor but not big on calories.
What to drink:
Start with White Sangria or your favorite citrus cocktail. The salad and Chicken are best served with something light and crisp - a pinot grigio or sauvignon blanc for a white wine or a chianti as a red wine.
Tablescape:
Use the abundance of spring flowers available - group small bunches in tall glasses and dot them down the center of the table. Don't forget some candlelight - small scentless candles or votive candles are best.
